shake and bake chicken
defrost drumsticks(tasty cheap and kid friendly)
pour any liquid over them I used buttermilk as I keep it on hand but you can use milk, water, mayo etc.
toss in corn starch or rice flour or just plain flour seasoned with any spices you have. I'm using and orange pepper blend( just like lemon pepper but sweeter!)
shake in bag and put on Pyrex or baking sheet
Bake at 375-400(I'm at 9000 feet so I'm at the lower temp as not to dry out the meat)
SAUCE
green onions, garlic, white onions (whats in the fridge?)
cook on medium til soft
add any liquid I used Sherry but you can use anything, wine, water, stock, mirin etc
I chopped up a tomato left over from lunch plus 2 tablespoons tomato paste left over from last weeks spaghetti sauce.
orange juice fresh? concentrated? mango juice? HEY left over apple juice from the sippy cup is GREAT!!
big swish of tamari or say sauce.
Let this reduce, if its too thick add some water.
pour over your chicken.
Serve with a crisp salad to cut the greasiness of fried chicken. Or green beans etc.
This would be a good recipe, if you used rice flour or corn starch, as a gluten free recipe

Raw milk and spinach ravioli in creamy tomato sauce
Ravioli with homemade raw milk cheese and spinach in a creamy tomato sauce.
Hardest part is to get some raw milk! BUT you can use store bought look for pasturized not ultra parturized.
spoon off the cream that rises to the top and set aside(this is for the sauce)
MAKE CHEESE
heat milk(about 1 gallon) to 185-190 degrees add 1/4 cup of apple cider vinagar(add slowly and only use enough to make it seperate to avoid vinagary taste. You can use the whole 1/4 if unsure(dont be scared its easy and youll be so proud of yourself for making CHEESE!!)
line a large bowl with a very fine holed colander(use chees or butter muslin if you have it. pour the chees and whey over it so the curds are in the colander and the whey pours into the large bowl. You can use the whey for MANY other uses. Im cooking french white beans with mine and serving it tossed in the ravioli and than using the left over beans served with corn bread or something else.
OK now you have made cheese!
MAKE TOMATO SAUCE
this is a quick sauce.
saute onions in olive oil til soft. Add a couple smashed garlic cloves
pour in a little wine(red or white doesn't matter or omit this step if unavailable or unwanted)
add some herbs I use dried bay leaf, some Italian seasoning, extra basil(for sweetness) and some sage. simmer on low while you are making the pasta(YES YOU CAN DO IT!)
MAKE PASTA
2 cups flour(white)
2 cups semolina (or just use all white its OK!)
4 eggs
dash of salt
big splooooosh of olive oil or another healthy oil
mix in either a kitchen aid mixer with the paddle or in a food processor till it comes together
If using KA mixer knead for 5 mins if using processor take out the ball of dough and knead by hand. You can watch videos on you tube about making dough. You can make it all by hand or all by machine. Really, its no big deal you can do it!
Let dough rest for a bit while you make the filling and sauce.
Roll dough with pasta roller or with rolling pin or heck Ive done it with a bottle too!!
Try and get it really thin if making ravioli as there's two pieces. If its too thick turn it into a layered lasagna or just cut into fettuccini. it will still be FULL of love!!
MAKE FILLING
I know you are getting tired but make this on a sunday and get the kids to help!
mix your HOMEMADE CHEESE with some cooked spinach add a fine grate of nutmeg if you have it if not some salt and pepper. Make sure its not too wet as it will ruin the dough and not seal well.
fill pieces of dough and top with another piece of dough. Use a fork to seal and pinch edges well.
I dip my finger in water and run it right around the filling and then seal to help it stick
IMPORTANT! try to squeeze out most of the air from your filling pocket as they may burst and release your filling. SEAL WELL!
Boil in BOILING salted water. They only take about three minutes
toss in HUGE bowl with the saved heavy cream(if your cat didn't get it!) and top with tomato sauce and fresh salt and pepper
