I am going to write a cook book some day....ahhh some day.
Anyway I am frequently asked for recipes, tips etc so I thought this may be a good place to organise my thoughts, try new things and hopefully get some feedback from others.
Here is what I cooked tonight They ALL cleaned their plates!Although not my healthiest!
Shrimp PO boys with sun dried tomato mayo, fried okra and fried potatoes
Start by cleaning the shrimp. I bought large shrimp because they were on sale for 5.99(reg 9.99)
Remove shells and tails devein shrimp but cut all the way through(to make them bite size)
soak in cold ice water to rinse off poop vein and keep cold(use ice from the super market)
take two eggs, separate whites into mixer bowl and put yolk into food processor(for mayo)
make mayo by turning on food processor(or blender) add one garlic clove,two or three sun dried tomatoes, drizzle in grape seed oil. once its a mayonnaise(one cup oil approximately)add a little lemon juice and salt and pepper. set aside. This is not easy so you can use store mayo and add the sun dried tomato, garlic and lemon juice. I actually added some anchovy too !
Heat your oil(I use peanut oil) to about 350-375
shred some cabbage and thinly slice red onion and soak in red vinegar,slice potatoes into fries
whip egg whites til stiff and throw in your shrimp toss to coat, roll in corn flour (not corn meal)
roll okra in corn flour.
Place in fridge to set the coating. This is very important if made in TX due to the heat.
Fry in oil. fry potatoes
make PO boys.
